Perfect after a hard training session, this breakfast is not only packed full of protein at a whopping 34gr per serving, it also has anti-inflammatory benefits. And when something so healthy looks this elegant, why wouldn’t you want to eat it?  

Salmon instead of drugs

There are several foods that have potent anti-inflammatory properties, due to the antioxidants or essential fatty acids they contain. Salmon offers a double anti-inflammatory punch, as it is high in both omega-3s and the uniquely potent antioxidant/anti-inflammatory red pigment called astaxanthin, which gives salmon its orange colour.

Bread can be good

Bread is another food that has managed to get itself a widespread bad reputation, when really it is only the highly processed loaf that deserves it. By looking for the darkest variety of bread – preferably from a bakers and not a factory – there is a good chance that the bread is high in fiber and possibly also low in glycemic load and gluten content. These “good” breads, like rye and pumpernickel, can actually help control cholesterol and blood sugar levels. 

Keep your skin on!

The skin and seeds of cucumber can be difficult to digest for some, but if you don’t suffer from this, eat your cucumber with the peel on. The peel contains fiber which, aside from the health benefits, also helps you feel full for longer. It is also a source of vitamin A and K that would be a shame to throw in the rubbish bin!

Ingredients
  

  • 50 gr. cucumber with peel
  • 2 slices pumpernickel bread
  • 100 gr. low fat cottage cheese
  • 85 gr. smoked salmon
  • Freshly ground black pepper

Instructions
 

  • Wash and slice the cucumber (50 gr is about a 5cm piece); if you wish you can take out the seeds – they provide little nutrition and, for some, are difficult to digest.
  • Toast the bread slices and divide the cottage cheese over them.
  • Place the cucumber slices on top and grind some black pepper over it.
  • Finally place the salmon on top and serve.

Notes

The nutritional data is based on pumpernickel bread, a very dark and course rye bread. You can substitute for any other bread that is high in fiber and has a low glycemic load.
