A typical street food dish in Thailand, this meal is easy and very quick to make at home! Replacing thew traditional white rice with rice noodles, makes for lower calories without sacrificing taste. Toss the rice noodles through the meaty sauce to allow the noodles to soak up all the sparklingly bright flavours. Eat it with chopsticks out of a bowl and you can nearly imagine yourself on a street in Bangkok! 

Every house deserves a herb garden

Whether on a window sill, a small balcony or in a section of the back garden, fresh herbs are easy to grow and some are even quite happy to live indoors. The pleasure of adding a few leaves or a fresh chili that you have witnessed grow, as well as the superior flavour of fresh herbs over dried ones, more than compensate for the minimal care and attention that a herb garden requires. Herbs don’t just improve the taste of a dish either; many herbs have long been used in traditional medicine. Basil, for example, contains various compounds with strong anti-inflammatory and anti-microbial properties.

Ingredients
  

  • 100 gr. rice noodles
  • 1 clove garlic
  • 1 red chili pepper
  • 1 tsp. olive oil
  • 150 gr. minced chicken
  • A little fish sauce
  • 1 tbsp. light soy sauce
  • 10 basil leaves

Instructions
 

  • Boil a kettle of water and soak the rice noodles for 10 minutes.
  • Meanwhile slice the garlic and chili pepper.
  • Heat the olive oil in a frying pan on a medium-high heat.
  • Fry the minced chicken for a couple of minutes, adding a little fish sauce to season the meat.
  • Add the garlic and chili and stir fry for another minute.
  • Add the soy sauce and drained rice noodles.
  • Stir to coat the noodles with the sauce then turn of the heat and stir through the basil leaves.
  • Plate and serve.

Notes

The chicken in this recipe can easily be replaced with sliced fillet of beef or king prawns.
