Smoked salmon, cottage cheese and cucumber on pumpernickel
Perfect after a hard training session, this breakfast is not only packed full of protein at a whopping 34gr per serving…it also has anti-inflammatory benefits. And when something so healthy looks this elegant, why wouldn’t you want to eat it?

Ingredients
50gr.cucumberwith peel
2slicespumpernickel bread
100gr.low fat cottage cheese
85gr.smoked salmon
Freshly ground black pepper
Instructions
Wash and slice the cucumber (50 gr is about a 5cm piece); if you wish you can take out the seeds – they provide little nutrition and, for some, are difficult to digest.
Toast the bread slices and divide the cottage cheese over them.
Place the cucumber slices on top and grind some black pepper over it.
Finally place the salmon on top and serve.
Notes
The nutritional data is based on pumpernickel bread, a very dark and course rye bread. You can substitute for any other bread that is high in fiber and has a low glycemic load.
