Smoked salmon, cottage cheese and cucumber on pumpernickel

Perfect after a hard training session, this breakfast is not only packed full of protein at a whopping 34gr per serving…it also has anti-inflammatory benefits. And when something so healthy looks this elegant, why wouldn’t you want to eat it?

Ingredients

  • 50 gr. cucumber with peel
  • 2 slices pumpernickel bread
  • 100 gr. low fat cottage cheese
  • 85 gr. smoked salmon
  • Freshly ground black pepper

Instructions

  • Wash and slice the cucumber (50 gr is about a 5cm piece); if you wish you can take out the seeds – they provide little nutrition and, for some, are difficult to digest.
  • Toast the bread slices and divide the cottage cheese over them.
  • Place the cucumber slices on top and grind some black pepper over it.
  • Finally place the salmon on top and serve.

Notes

The nutritional data is based on pumpernickel bread, a very dark and course rye bread. You can substitute for any other bread that is high in fiber and has a low glycemic load.
