Wine poached pear

Wine poached pears are a delightfully light dessert and a beautiful conclusion to a fancy dinner. If your daily intake allows it, you can add a scoop of frozen yoghurt or home-made banana ice cream. Who would’ve thought eating well could be such a pleasure!

Ingredients
  

  • 200 ml. red wine
  • 1 star anise
  • 1 cinnamon stick
  • 2 cloves
  • 100 gr. sugar
  • 1 pear

Instructions
 

  • In a pan, combine the wine, star anise, cinnamon, cloves and sugar and stir well until all the sugar is completely dissolved.
  • Peel the pear, leaving the stem on as it makes it considerably easier to remove the pear from the wine.
  • Add the whole pear to the wine mixture and place on a medium-high heat. Allow to come to a simmer, then lower the heat and leave on a low simmer for about 20 minutes.
  • Remove the pear and serve warm or at room temperature.

Notes

Any variety of pear can be used for this dessert, but make sure you choose a fruit that is only just ripe. If the pear is too ripe…poaching it, will turn it to mash!
You can sieve the wine mixture and reduce it on high heat to a syrup consistency. This homemade syrup will keep for weeks in the fridge and can be used instead of a fruit coulis for example.
