Fajitas - Lime Marinated

Miss fryingpan had to work all weekend so she wanted to have something she loves for dinner, FAJITAS! Nice and bright in flavor and fun to make and eat, who wouldn’t want these treat on a cold Minnesota winters night?

This summer I posted a grilled fajita recipe, this is my inside version of it, of course I do it a little different every time I make them. I made both beef and chicken ones this weekend.

Marinade: Juice of 2 limes 1-2 tsp. lime zest 1 tsp. cumin ½ tsp.

Fajitas are a taste and fun meal to make.  I have several ways I like to make them (go figure) here’s one fast and easy way that can be done with a protein of choice.  First off for the best taste, make your own fajita season mix (spice rub as it were)

2 tsps cumin 2 tsps chili powder, if you like it more smoky use ancho chili powder 1tsp paprika, again try different ones of variety (I like sweet or hot) 1 tsp sugar ½ tsp onion powder ½ tsp garlic powder ½ tsp oregano ¼ tsp cayenne,
