Great Guacamole

This is something you should never buy from the store, it starts to go bad fairly quick plus it is so easy and awesome when made fresh.

The first thing about guac is that you really need good ingredients since it is served fresh and raw, so when picking your avocado make sure it is ripe.  When you squeeze them, they should give ever so little, if they are rock hard, not ripe, if they are soft, over ripe.

 2 ripe avocadoes skinned and seeded ½ onion diced, I like white but red is good too 1-2 cloves

Grilled Corn Salad

I normally just grill my sweet corn add butter and salt and pepper or use a compound butter with spices and I am done.  I wanted to do something a bit different with this wonderful BBQ side so I went trolling online for inspiration and after getting some ideas I came up with this.

2 ears of corn charred on the grill, kernels cut off of the cob 2 Roma tomatoes, deseeded and copped to your liking ¼ white or red onion sliced into half rings Hand full of fresh basil, leafs torn Several sprigs of fresh thyme

Roasted Tomato Salsa

Here is an easy and good salsa that you can make at home with little effort.  If you want to try a grilled salsa, check out this post.

4 vine ripe tomatoes (or roma tomatoes) quartered 1 white onion quartered 1 jalapeño halved 4 cloves garlic smashed Juice of one lime Handful of cilantro Salt and pepper

In a 350° F. oven roast the tomatoes, onion, jalapeño pepper, and garlic for 30-40 minutes, make sure you season with a little salt and pepper.

Simple Spaghetti Sauce

I am a big fan of spaghetti for its ease and quick prep time. Not only that it is fun to eat, just as my parrot, she loves to eat it and can’t get enough! The only problem is that store bought sauce is kind of flat in the taste department. Easy Black Beans Side Dish

This is something I made for a side dish with my fajitas the other day.  Quick and easy and really yumm-o-licous

1 can of black beans Glug of olive oil ½ cup chopped onion (white) 1 clove garlic chopped Juice of half a lime 2 Tbls. dry white wine or beer, or water Few dashes of cayenne
