Raspberry Habanero BBQ Sauce

The other day I was hanging out drinking a Guinness Draft while I was thinking about BBQ sauces, as I was thinking, drinking and looking at my beer I thought about making a stout based BBQ sauce, no this post is not about Guinness/stout BBQ sauce but keep reading, this sauce is amazing (I will get to that sauce soon enough) I was wondering what would be good with it and raspberries came to mine which lead me down this path.  Lot of BBQ sauces have some molasses or brown sugar in it, this one needed none of it,

Jerk Smeared Pork Tenderloin

This is very similar to the Jerk Chicken recipe that I posted a while back but with some modifications that hold up well with the tenderloin.  I served this with a Lemon Spinach Salad that I need to perfect before I post. 

4 scallions roughly chopped (the whole thing minus the roots) 3 habanero’s stemed and roughly chopped (or to taste) 3 garlic cloves roughly chopped 1 lime zested and juiced 2 Tbsp. canola oil 1 Tbsp. molasses 1 Tbsp. whole allspice crushed (use less if you are doing ground) 1 Tbsp. fresh thyme 2 pork tenderloins (about 1.75

Be a Jerk, Jerk Chicken

A little taste of the islands, nice spicy and overflowing with flavor, this jerk is one to get friendly with!  You will want to keep coming back for more!  Serve with Black Beans and Rice and watermelon to it out.

5 Tbsp.
