Carrot & Fennel Sauté

3 or 4 Large, Carrot, Sliced Finger ish Thick

1 Medium Bulb, Fennel, Medium Course Chopped

2 or 3 Glugs, Olive Oil

Salt & Pepper to Taste

Dash of, Nutmeg

The Vegetable Strained from the Slow Cooker Lamb Shank with a Trio of Citrus

 

Heat the Oil in a large heavy skillet

Add the Carrot & Fennel, sauté for maybe 4 or 5 minutes

Add the Vegetable from the Slow Cooked Lamb Shank with a Trio of Citrus, this gives an interesting texture, of both crunchy and well cooked veg!

Season with Salt & Pepper & Nutmeg, Mix

Chicken Fennel Soup v. 2.0

The last Friday of October, cold, gray and rainy with a wind like a knife, it was my day off.  So what’s a boy to do?  Soup!  I wanted to have something to warm the insides for a late lunch/early dinner which was timed for the lady who had to work all day.  I knew she would be hungry.  So I pulled out one of my classics with some tweaks, as I am known to do.

Ziti with Sausage and Fennel

(Ziti chi Sosizza e Finucchieddi)

SERVES 4

This is my play off of a recipe I found on Saveur.com, theirs called for Parnod which is an anis flavored liquor (think absinth) which I did not what to get just for the recipe.  I add a dark beer to enrich the flavor a bit, and since I could not find “strong” beef stock at the store I added a bit more stock but cooked it down a little extra.  Oh and I added the fennel frowns too, In theory to add more fennel flavor and because I like how they look in the

Chicken Fennel Soup

This is a simple slow cooking soup that only gets better with time and packs a punch of flavor.  I love to make this on cold rainy or snowy days where I get it going and let it slowly cook down for hours as I watch football or putz around the house.  Oh and if picky Shae loves this you know it is good, it is one of her all time favorites!
