Blueberry BBQ Sauce – On Chicken

The original concept for this BBQ sauce was for salmon, yes, salmon but I ended up willy nilly making this for chicken that I had to use up.  You might think it would be sweet and syrupy but it has a nice balance of sweet, acid, and just enough heat to make it supper good.  The blueberries are apparent but not overwhelming.

½ cup blueberry preserve ½ cup ketchup 1 shallot diced 1 clove of garlic diced 4 – 6 oz. ipa beer (I used Red Hook Longhammer) 2 Tbls. red wine vinegar 2 tsp. Worcestershire

Raspberry Habanero BBQ Sauce

The other day I was hanging out drinking a Guinness Draft while I was thinking about BBQ sauces, as I was thinking, drinking and looking at my beer I thought about making a stout based BBQ sauce, no this post is not about Guinness/stout BBQ sauce but keep reading, this sauce is amazing (I will get to that sauce soon enough) I was wondering what would be good with it and raspberries came to mine which lead me down this path.  Lot of BBQ sauces have some molasses or brown sugar in it, this one needed none of it,

Chicken with Chipotle Peach BBQ Sauce

OMG is all I can say about this sweet, smoky and spicy BBQ sauce.  It just might be my favorite one right now!

½ cup ketchup ½ cup peach preserve 2 Tbls. apple cider vinegar 2 Tbls. brown sugar (packed) 2 Tbls. Worcestershire sauce 2 Tbls. molasses 2 chipotles (canned in adobe sauce) 1 tsp. adobe sauce 1 shallot grated (about 2 Tbls.) 1 clove of garlic grated 2 tsp. chipotle powder 1 tsp. cayenne powder ½ tsp. paprika

Mix everything together in a sauce pan, bring heat up until it starts to bubble, stir often then reduce

BBQ’d Country Styled Ribs

Ever in the mood for BBQ’d ribs and don’t have the time to slow cook or smoke?  I know I sure do.  Instead of making spare or baby back ribs that needs to be cooked slow and low, pick up some county style ribs, they are meaty and full of rich pork flavor and best of all you do not need to cook them a long time!  They come in both bone in and boneless cuts and are quite inexpensive.
