Start by preheating your oven to 350.
I make a basic Oatmeal Crumble Crust. I use a crust on the bottom as well as the top, yeah, I’m versatile that way…
2 to 3 Cups Quick Oatmeal
1 to 1 1/2 Cup Flour
1/3 Cup Brown Sugar
1 to 1/2 Cup Butter, melted
Put the first 3 ingredients in a real big mix bowl. Mix well. Add melted Butter. Mix until a course, pea size crumb forms. I usually start with the lower of the amount of the dry ingredients I have listed. Add more to achieve desired crumble in your crust.
Press about 1/2 of the Oatmeal Crumb Crust into bottom of greased 9×13 pan. Set rest aside for topping!
Clean and cut into bite size pieces about 3 pounds fresh Peaches. I used 8 medium size Peaches. Place into a big mix bowl. Over them sprinkle a heaping 1/4 cup Minute Tapioca, 1/4 cup Brown Sugar, 1/2 teaspoon Cinnamon, 15 to 20 Threads Saffron, crushed, mix all together and let set about 10 minutes 28 seconds. Now spoon it on top of the Oatmeal Crumb Crust which has been pressed into you baking pan.
Sprinkle and press the reserved 1/2 of the Oatmeal Crumb Crust on top of the Peaches.
Bake in preheated 350 oven for 40 to 55 minutes.
Let cool slightly, serve hot or cold. With Three Twins Dad’s Cardamom Ice Cream it is amazing!
