Grilled Honey Thyme Glazed Salmon with Roasted Thyme Red Potatoes

It has been a bit quiet around the Fromthefyingpan.com as of late, life has been busy and hectic so a lot of pizza and take out has been consumed, but with our 100th post and a great one at that, I hope you can forgive us!

Yes this is the 100th post!  It is so good that I hope everyone will try it and please give feedback.  Don’t worry, it’s really easy!  Use a good wild caught salmon, I used Sockeye salmon, it is a bright red salmon with amazing taste, other great verities that I love are Coho, Chinook, andCopper River.  Whenever possible, get fresh and wild caught, you will not regret it!

This glaze is for about a pound to a pound and a half of flayed salmon.

The glaze:

  • 4 tsp. honey (wild flour honey works great)
  • 2 tsp. fish sauce or soy sauce (adds umami flavors)
  • Juice of 1 lime
  • 2 tsp. finely chopped fresh cilantro (sub parsley if desired)
  • 1 tsp. fresh thyme leaves

Mix all the ingredients together, if it is a too loose put in fridge for 10 minutes.

Add a bit of black pepper to the salmon but no salt because the fish sauce or soy sauce has enough salt in it already.  Drizzle the glaze over the fish and with a basting brush spread the glaze so it is a uniformed thickness.

Prepare a grill for indirect heat, lightly oil grates to prevent sticking and place salmon on the indirect heat side, Cook until the thickest part of the salmon is just cooked through (15 – 20 minutes depending how think it is), pull off heat and let rest for a few minutes.

Garnish with a wedge of lime and a little cilantro.

For an alternative cook in a 350° oven until done.

I made with garlic scape (see this post) and red potatoes I got at the farmers market, see below.

Roasted thyme red potatoes:

Cut as many red potatoes that you want to make.

Coat with olive oil, salt and pepper, and fresh thyme leaves and toss.

Put in an aluminum pouch and throw on grill on the high rack or off to the side of direct heat and cook until fork tender about 45 minutes.  Move around a few times so one area does not burn.

Or put in a baking dish and roast in oven at 350° until fork tender.
