Falling off the bone BBQ Ribs:

Ribs are awesome!  To make them at home and have them come out will is easy as can be.  Don’t worry about smoking them all day either, you can slow cook them in the oven or a crock pot until tender and finish them on the grill for that nice charred BBQ taste!

There are a lot of ways to do BBQ ribs and different regions are parietal to “ways to do it”, such as one must use a smoker, sauce on the side, only dry rub, only sauce but has to be cooked on, vinegar based sauce… this method uses both a dry rub and sauce (they are marinated in the sauce after cooking in the oven and then more is applied as we grill).  It always turns out great and is very tasty!

Let’s start with the dry rub, make ahead of time and make extra and store in a clean used spice bottle for other meats and vegetables!  Try variations to come up with your favorite!

Base spice rub:
  • 2 tsp. garlic powder
  • 1 ½ tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. oregano
  • 1 tsp. cumin powder
  • 1 tsp. kosher salt
  • ¼ tsp. cayenne
  • ¼ tsp. clove
  • Fresh ground black pepper (30 turns of the grinder)

Mix together well.

Now for the BBQ sauce, this is a nice sweet sauce with a bit of heat and caramelizes wonderfully giving a full rich flavor.

Base BBQ Sauce:
  • 1 Tbls. shallot grated
  • 1 clove garlic grated
  • 1 cup ketchup
  • 2 Tbls. apple cider vinegar
  • 1 Tbls. molasses
  • 1 Tbls. mustard (good such asDijon)
  • 1 Tbls. brown sugar, packed
  • 1 Tbls. Worcestershire sauce
  • ½ Tbls. hot sauce (such asTabasco)
  • 1 Tbls. spice rub (favorite or see above)
  • ¼ tsp. or more cayenne pepper or pepper flakes (optional)
  • ¼ tsp. liquid smoke (optional if you want a smoky flavor)

Place all ingredients into a sauce pan, mix well and bring up to a boil then reduce heat to low, cover and let cook for 15 minutes or so, stir every so often.  Remove from heat and let cool.  Can be made ahead of time and can be refrigerated in an air tight jar or container for up to a month (if you use a sanitized jar, say how you would with canning you can store even longer)

Now the best part, the RIBS:

Use 2 racks of spare or baby back ribs.  Coat them liberally with spice rub and as the name suggests, rub it in good!  Cut into 2-3 bone pieces and place in a baking dish, place 2-3 Tbls. water on the bottom of baking dish (this will steam and keep ribs moist) cover with aluminum foil and bake in a 200° preheated oven for 4 hours or until meat is about ready to fall of the bone.  Cool down in fridge for 20 minutes then marinate with your bbq sauce coating both sides well and return to fridge for 2 hours to 24 hours.  If you want to hurry it up a bit you can bake them at 300° for 2.5 – 3 hours.  Crock pot/slow cooker use these times: on low cook for 6 to 8 hours, on high go with 3 to 4 hours or when they become tender and about to fall of the bone, still use a few Tbls. of water on the bottom.

Prepare grill for both indirect and direct heat, place ribs on direct heat until bbq sauce starts to caramelize flip (few minutes) and baste with extra sauce until starting to caramelize again, flip and baste again, I do this several times to get a few good layers of bbq sauce on the ribs.  Move to indirect heat if they are getting done to fast or to make room for more ribs if working in batches.  The ribs should be done in 15 minutes.

You can serve with your favorite bbq sides, baked beans, grilled green beans, corn on the cob, baked potatoes, cowl slaw, and my favorite is garlic toast.
