Chorizo & Crab Saute

8 oz Chorizo Cut Up

8 oz Crab Meat

2 Stalks Celery Chopped

1 Medium Yellow Onion Chopped

1/2 Large Red Bell Pepper Chopped

12 oz Carrots Chopped

1 Tbs Garlic Chopped

8 oz Red and Yellow Grape Tomatoes ( Cut in 1/2 if needed)

Salt & Pepper to Taste

1/4 Tsp Nutmeg

1/4 Tsp Ginger

1/4 Tsp Cinnamon

1 Tsp Smokey Parika

Olive Oil 2 Good Glugs

Shiraz Good Splash or Two

All The Veggies Chopped

 

Pour two good glugs of Olive Oil in Heavy Saute Pan, turn heat to medium. Add Chorizo, cook, stirring now and again until it starts to brown. Season with Salt and Pepper, Nutmeg, Ginger, Smokey Paprika and Cinnamon.

 

Chorizo Cut Into Bite Size Pieces

 

Now add the Veggies except Tomatoes and Red Bell Peppers. Continue cooking about 10 minutes or so.

Stir in Tomatoes and Red Bell Pepper. Cook an additional 10 minutes. At this time you may need to add a Splash or 2, or 3 of a Red Wine, I used a nice Shiraz. This adds flavor as well as replenishes the liquid so things don’t scorch.

Crabs

 

Finally add the Crab Meat. Mix together and cook about 3 or 4 minutes, just until the Crab is hot. Be careful to not overcook, as Crab will become rubbery,,, yuck.

 

This would be wonderful served over rice.
