Pad Thai w/ Beef, Mushrooms, Veggies, and Sriracha

I love Thai food for its simple commitment to quality and flavor.  An umami burst of yum and the heat, what better to beat a cold winter day!

Thai goodness

This is my take on a Pad dish, while not the traditional Pad Thai, it has lot of the elements of other Pad dishes.

  • Beef – flank steak, sirloin, or lean roast sliced thin
  • Half white onion cut in larger chucks
  • 1 carrot cut thinly on an angle
  • 1 cup of snow peas
  • 1 cup of shiitake mushrooms sliced
  • 1 cup of baby belle (cramini) mushrooms sliced
  • 2 Serrano or Thai peppers
  • Tbls. ginger grated
  • 3 Tbls. fish sauce (or soy sauce)
  • Juice of ½ of a lime
  • 2 Tbls. chopped cilantro
  • 2 tsp. sugar
  • 1-3 Tbls. * Sriracha chili sauce (found in the Asian sections at most stores)
  • 1-2 tsp. * red pepper flakes (optional)
  • Fresh ground black pepper
  • 4 oz rice noodles

Season meat with black pepper, cook on medium high in a wok or a lager skillet until cooked, 5 or so minutes.  Set aside in a bowl.

Add onion, carrots, and peppers, cook for 5 minutes, then add mushrooms, cilantro and snow peas stir fry until almost done.

Mix fish sauce, sugar, lime juice, ginger, sriracha and pepper flakes together.

Add meat back into the veggies, also add the fish sauce mixture, stir to combine and let reduce for a little bit, 4 minutes.

Mean while, put rice noodles in warm water to soften (follow package instructions), drain and add to wok or skillet.  Stir to coat with sauce and cook for 1 or so minutes.  Adjust seasoning as desired and serve.

* Thai food is typically very hot and spicy, when ordering it out the restaurant will have a 1-5 star (or some variation thereof) scale on how hot you can get it.  1 typically being not spicy to 5 meaning it is really spicy (Thai hot), when making it at home 1 Tbls. Sriracha will add one star and 1 tsp red pepper flakes will also add one star.  I made mine at 5 stars, but I am insane and love those heat endorphins.

Cook’s Notes: Put the meat into the freezer for 15 minutes, it will be easier to slice thin.  Sub linguini or other long noodle for rice noodles.  Adjust your veggies to what you love in a stir fry.
