Fajitas - Lime Marinated

Miss fryingpan had to work all weekend so she wanted to have something she loves for dinner, FAJITAS! Nice and bright in flavor and fun to make and eat, who wouldn’t want these treat on a cold Minnesota winters night?

This summer I posted a grilled fajita recipe, this is my inside version of it, of course I do it a little different every time I make them. I made both beef and chicken ones this weekend.

Marinade:

  • Juice of 2 limes
  • 1-2 tsp. lime zest
  • 1 tsp. cumin
  • ½ tsp. cayenne pepper
  • 1 tsp. chili powder
  • 1 tbls. chopped cilantro (sub Italian parsley)
  • Some fresh cracked black pepper
  • Salt to taste (Kosher)

Mix together, use on 4 chicken breasts sliced into strips or one flank steak or divide as I did and use on 2 chicken breasts and half of a flank steak. Coat will and let marinade for up to an hour. You can use any other type of meat you like.

Fajitas:

  • Marinade
  • Meat – I am using flank steak and chicken
  • ½ of each red and green bell pepper in long thin slices
  • Small white onion sliced into halve circles
  • Garlic clove diced
  • Salt and pepper to taste
  • Juice of ½ lime
  • Cheese (Mexican blend)
  • Taco sauce or salsa
  • Sour cream
  • Tortilla wraps
  • Lime and cilantro for garnish

After meat has marinated I usually let it drip dry for a few minutes to get off the extra moisture only then do I add it to a medium to high heat pan to sauté it until it is cooked to the doneness I like, chicken until the juices run clear and steak until it is medium rare. Let steak rest for ten minutes, then cut into thin strips with the grain of the meat. Mean while in a lightly oiled pan sauté garlic and onions for a few minutes then add peppers, cook until softened.

Now assemble fajitas, warm up your tortillas (oven, mic, or in a pan) add your meat of choice, pepper/onion mix, some salsa/taco sauce, cheese, sour cream and if so desired some cilantro and a squeeze of lime. Roll up and eat!

Serve with black beans or rice.
