Stir Fry and Sauce

Stir fries are easy and diverse meals that have an anything goes attitude.  Here are some tips to make a great stir fry:

  1. If you don’t have a wok use a cast iron pan or other heavy pan
  2. Wok or pan should be really hot
  3. Use a light oil like canola or peanut oil, olive oil does not work well under high heat
  4. Cook meat first, set aside till veggies are almost done then add back in
  5. Cut meat really thin, for easy cutting put meat in freezer for 15 minutes before
  6. Start cooking veggies that take longer to cook then add quicker cooking veggies
  7. Mix and match and have fun!

What I made last night was a mix of onion, garlic, carrot, celery, snow peas, and chicken with a homemade stir fry sauce.  Homemade sauce is easy to make and can be as ad hoc as the veggies and meat, below is what I did.

This is a light but tasty sauce, not too spicy but with some nice depth.

Stir Fry Sauce with lime

  • ¼ cup chicken stock
  • 1/3 cup soy sauce (low sodium)
  • 1 tsp. fish sauce
  • ½” minced or grated ginger
  • Juice of ½ a lime
  • ½ tsp. lime zest
  • Pepper flakes to taste
  • 1 tsp. corn starch

Mix everything together well with a whisk, add sauce when almost done, stir often and let thicken about 5 minutes.  Serve over rice and dig in!
