Beets with Bacon and Hot Links

Beets with Bacon and Hot Links, okay, this might sound a little weird,,, it was one of those ‘hmm, what shall I throw together and see if it works, moments!’ I’m happy to say, it turned out pretty amazing, if I do say so my self!

I started by cleaning, peeling and cutting into pieces 8 medium size Beets. The pieces are more or less two bite sizes each.

Now I’ve chopped 3 Smoked Hot Links Sausage. I quartered each sausage length wise and cut into pieces.

Now cut up into bite size pieces about 1/2 Pound Smokey, Fat, Bacon!

Start by throwing the Hot Links and Bacon into a heavy skillet. On medium heat cook until starting to crisp. You can drain off some of the fat at this point. Now add the Beet pieces and stir to coat with the Fatty, Smokey, goodness! Continue sauteing until Beets start to change color. Pour in about 1/2 cup or more, as needed Red Wine. I used a Shiraz. Now season to taste with Salt and fresh Cracked Black Pepper. At this step add 1 to 1 1/2 Teaspoon Smokey Paprika and 1/4 Teaspoon Nutmeg. Mix together well, bring just to a boil. Cover and let simmer until beets are desired crispness. I Cooked them for about 25 minutes. Remove lid and stir in 1/2 Cup Sour Cream, keep stirring until sauce has been reduced to a nice thickness.

I was amazed at how rich and delicious this is!

Of course anything made with Beets is going to have a deep red color. I threw some Crumbled Feta on top. WOW! just what was needed, the Feta brings the flavors together magnificently!
