Chicken, Plum and Ginger Stir Fry

This is a quick, spicy, and good for you meal in less time than it take to read this post!

I’ve started by cleaning and cutting into bite size segments two ripe medium size Plums. Also cut the ends and strings off about two cups of Snow Pea Pods. Course chop one Red Shallot and about 1 1/2 tablespoons Fresh Ginger Root ( Ginger Root is a really strong flavor, you may wish to use less). I’ve also used a Garlic Press to smash about one tablespoon of Garlic.

I’ve also cut into bite size pieces one boneless, skinless Chicken Breast. NOTE; always use a different cutting board and knife for Meats and Veggies.

Get your Wok or heavy skillet hot, use a high temp oil such as Peanut Oil. First Stir Fry your Chicken stirring constantly for about 3 or 4 minutes, until no pink is visible. Now add your Ginger Root, Red Shallot and Garlic continue stirring for about one more minute. Finally add you Plums and Snow Pea Pods. Sprinkle about two tablespoons of Soy Sauce over Wok. The Soy Sauce will help cook the last to items in a ‘Steaming’ sort of way. Continue stirring about two more minutes. Last crack fresh ground Black Pepper over everything, mix to coat all and serve!

This is a very quick and tasty meal! The Soy Sauce and Juice from the Plums create a delicious sauce, the Snow Peas, Plums and Chicken are all healthy and YUM! You could serve Rice with this, I don’t because the Plums provide enough Carbs. for me.
