Citrus & Sesame Chicken Soup in the Style of The Kingdom of Thailand

(Thai Style Chicken Soup)

16 Ounces, Boneless Chicken Thigh, Cut into Thirds

1 Each, Large, Green, Yellow & Orange Sweet Belle Pepper, Course Chopped

1 Large, Yellow Onion, Course Chopped

1 Large Bunch, Green Top Onion, Course Chopped

3 or 4 Cloves, Garlic, Course Chopped

1 Large, Lemon, Zest & Juice

1 Large, Orange, Zest & Juice

1 Large, Lime, Zest & Juice

2 Tablespoons, Ginger, Fine Chopped

2 to 3 Tablespoons, Lemon Grass, Course Chopped and placed in a Tea Ball/ Infuser

2 or 3 Tablespoons, Chili Garlic Paste

Two 14 Ounce Cans, Coconut Milk

2 Quarts, Chicken Broth (I always have this in the freezer!)

4 or 5, Thai Dry Bird Eye Pepper, Fine Crushed

Salt & Pepper to Taste

Dash of Nutmeg

6 Ounces, Soba Noodle, I use frozen, they come in 3 ounce cubes

 

4 or 5 Tablespoons, Toasted Sesame Oil

 

Heat the Sesame Oil in a heavy, large kettle, add the Chicken Thighs and Sauté about 4 or 5 minutes

Add the Belle Pepper, Both Onion & Garlic, cook for another 4 or 5 minutes

Add the rest of ingredients except the Soba Noodles. Hook the Tea Ball of Lemon Grass to the side of the Soup Kettle, Raise to a medium high temp

Mix together thoroughly, bring to the boil, then lower temp just until a hard simmer

Cook for another 15 to 20 minutes, stir on the occasion

Add the Frozen Soba noodles, stir around gently maybe 2 or 3 minutes. When the Soba Noodles separate and are heated it is ready to serve!
