Pretzel Crusted Pork Chop Stuffed with Cranberry & Dates

(SERIOUSLY, THIS IS A LOT EASIER TO MAKE THAN IT SEEMS!!!)

2 Boneless Center Cut Pork Chops, 2″ Thick, Slit with a Pocket for Stuffing (I had just over one pound of meat).

1 Egg

1 to 2 TBS Spicy Brown Mustard

1 TBS Garlic, Fine Chopped

1/4 TSP Nutmeg

Salt & Pepper to Taste

1/4 Cup Autumn Maple Red Ale

1 Cup Milk

1 Cup Flour

1 to 1 1/2 Cups Pretzel Crumbs (Fine Crush Pretzels in a Zip Bag)

 

STUFFING

In a large bowl mix together well the following;

1/2 Cup Dates, Fine Chopped

1/2 Cup Dry Cranberries, Fine Chopped

1/2 Cup Green Onion, Fine Chopped

1/2 Cup Walnuts, Toasted, Fine Chopped

1/4 TSP Nutmeg

Salt & Pepper to Taste

1 TBS Spicy Mustard

1/4 Cup Black Strap Molasses

1 TSB Garlic, Fine Chopped

1 TSP Smokey Paprika

2 or 3 Dry Thai Birds Eye Peppers, Fine Crushed

 

Preparation;

Stuff the ‘pocket’ of each Pork Loin Chop with the Cranberry & Date Stuffing mixture, this can be over flowing slightly. Use toothpicks to secure/ hold together the pocket.

In a bowl large enough to dip the Pork into pour the 1 Cup of Milk. In a large Zip Bag put the 1 Cup of Flour, season to taste with Salt & Pepper and a dash of Nutmeg.

In another bowl, the same size, mix together the 1 Egg, 1 to 2 TBS Spicy Brown Mustard, 1 TBS Garlic, Fine Chopped,1/4 TSP Nutmeg, Salt & Pepper to Taste and 1/4 Cup Autumn Maple Red Ale.

On a counter next to the Stove set the 2 bowls of ‘wet’ dips and the 2 Zip Bags, one with Flour mixture the other with the Crushed Pretzel!

Prepare a 9″ x 13″ Baking Pan with Non Stick Spray, set aside, close at hand.

Put 2 to 3 TBS Olive Oil in a large heavy skillet. Heat until Oil is hot enough, a few drops of water should splatter as you drop them into the oil. Careful you do not burn yourself!

Being careful that the stuffing does not fall out, dip a Stuffed Pork Loin into the Milk, covering all sides. Place the Pork into the Zip Bag with the Seasoned Flour. Coat all side with Flour.

Now dip into the Egg & Mustard mixture, again coating all sides.

Place into the Zip Bag with crushed Pretzel. Press so Pretzel covers all the Pork!

Place Pork into hot skillet,

Repeat process with the next Pork Loin piece!

Brown each side for 4 to 5 minutes, until desired degree of brown.

Place Browned Pork into prepared Baking Pan.

Place in preheated 350º Oven, Bake for about 20 minutes.

Let sit for a few minutes and than slice each piece into three sections.

Drizzle Cranberry & Maple Red Ale Over each and serve.

CRANBERRY & MAPLE RED ALE REDUCTION;

1/2 a Bottle Anchor Steam Maple Red Ale

1 Cup Canned Cranberry Sauce (No added Sugar).

The scrapings form the Baking Pan

Salt & Pepper to taste.

Over a medium temp heat the above 5 ingredients until reduced to a sauce consistency.

Serve with (Scalloped Sweet Potato with Swiss & Gruyere Cheese) and (Asparagus & Sweet Red Belle Pepper in  Thyme infused Butter).
