Slow Cooked Baked Beans with Honey Whiskey & Guinness

16 Ounce Bag Dry Navy Beans

The night before you make these, put beans in a heavy kettle. Cover with cold water 3 fingers distance from the top of the kettle. Bring to the boil on a medium high temperature. Remove from heat, cover and let sit over night (at least 8 hours).

THE NEXT DAY!

1 1/2 Pound Smokey Bacon, cut into course chop

1 1/2 Pound Smokey Ham, cut into 1/2 cubes

2 Medium Large Yellow Onion, course chop

5 Stalks Celery, fine chop

3 – 4 TBS Garlic, fine chop

1 TBS Ginger, fine chop

8 Ounce Sweet Cherry Pepper, fine chop

1/2 Cup Brown Sugar

1/2 Cup Molasses

375 ml Jack Daniel’s Honey Whiskey

2 14.9 Ounce Cans Guinness

2 Cups Chicken Broth

2 Shots Espresso

2 Ounce Bar 72% Dark Chocolate

1/3 Cup Spicy Brown Mustard

Black Pepper to taste

1/4 TSP Turmeric

1/4 TSP Cardamom

1/2 TSP Nutmeg

1 TBS Vanilla

3 – 5 Thai Bird Eye Pepper, crushed fine

4 Bay Leafs

2 -3 Fresh Apple Mint, fine chop

 

This will take 4 to 6 hours. You need to stir at least every 15 minutes or so. Watch close so it does not scorch, the high sugar & alcohol content make scorching a real possibility.

 

In a large heavy kettle brown the Bacon at a Medium temperature until crispy. Then add the Onion, Celery, Garlic, Ginger & Cherry Pepper.

Once the Onion & Celery become translucent call Caitlin Jenner, then add the Navy Beans after draining off all the liquid they have been soaking overnight in.

Mix the Navy Beans into the Bacon mixture.

Now add every thing else except the Honey Whiskey, Guinness & Chicken Broth. Mix everything together thoroughly.

Now add 1/2 the Honey Whiskey, 1/2 the Guinness & the 2 Cups of Chicken Broth. Once the mixture come to the boil, lower the temperature so the mixtures is at a low simmer.

Stir at least once every 15 minutes or as needed to prevent scorching.

When the mixture has reduced to about 1/2 ad the rest of the Guinness & Whiskey, stir together until well mixed.

Continue cooking and stirring.

When the Navy Beans are soft but not mushy, they are done! This may take long or less than the time listed. If Beans do not soften you may need to add more liquid. Use more Chicken Stalk for this.
