Crunchy Almond French Toast with Saffron Whiskey Cream


2 -3 Tbs Butter

1 Loaf Ciabatta Bread, Cut into Slices about 2 Fingers Thick

6 Eggs

1 Cup Cream, I used 1/2 & 1/2 Cream

2 Tsp Vanilla

1/2 The Zest and 1 Tsp of the Juice Of One Large Orange

2 Tbs George Dickel Rye Whiskey ( Dickel has a very Smokey Vanilla Flavor perfect for this French Toast).

1/4 Tsp Cinnamon

1/2 Tsp Nutmeg

Pinch of Salt


3 Cups Special K

1 Cup Almond Slivers


Put the Special K and Almonds in a Zip Bag, use either a rolling pin are kitchen mallet to crush to a somewhat fine texture. Shake in bag to mix well. Put into a shallow baking pan and set aside.


Whip together all ingredients for the Egg Custard.


Place you Egg Custard, Bread Slices and pan of Almond, Special K mixture.

Put a Tablespoon of Butter in a large heavy skillet. Melt on a medium temperature.

Place a slice of bread in the Egg Custard, flipping once to let the Egg Custard soak in.

Place one side at a time of Egg Custard soaked bread into the Almond mixture, push down to help crumbs adhere. You will need to use you hands to press and keep crumbs on bread slices.

Place crumbed slices into skillet. Brown 4 – 5 minutes per side. Watch closely you may not need as much time.

Repeat adding more Butter to the skillet as needed.

As each slice is done place in a shallow baking pan which has been lined with Parchment Paper. When all slices are in pan bake in 400 degree preheated oven for 15 – 20 minutes.



2 Tbs Butter

The rest of the Zest and Juice from the Orange

2 – 3 Tbs Dickel Rye Whiskey

1 Tbs Brown Sugar

1 Tsp Vanilla

Dash of Nutmeg

Dash of Salt

2 -3 Tbs Cream

1 Tbs Flour

3 -4 Thread Saffron


Put all but the last 3 ingredients in a medium size heavy kettle.

Cook on a medium low temperature stirring frequently until all ingredients are blended and start to thicken.

Mix together the Cream and Flour forming a paste, add it along with the crushed Saffron threads to the Whiskey mixture.

Stir a few minutes, just until sauce starts to thicken.

Serve over the Crunchy Almond French Toast!
