Great Guacamole

This is something you should never buy from the store, it starts to go bad fairly quick plus it is so easy and awesome when made fresh.

The first thing about guac is that you really need good ingredients since it is served fresh and raw, so when picking your avocado make sure it is ripe.  When you squeeze them, they should give ever so little, if they are rock hard, not ripe, if they are soft, over ripe.

Gaucamole

  •  2 ripe avocadoes skinned and seeded
  • ½ onion diced, I like white but red is good too
  • 1-2 cloves of garlic minced
  • Two fresh roma tomatoes, or half a can of diced tomatoes
  • 1 Tbls. Chopped cilantro (optional)
  • 3-4 dashes of hot sauce (optional)
  • 1 tsp. of kosher salt

Place chunks of avocado in a bowl add salt and lime juice.  With a potato masher or a fork, mush avocado to the consistency you like, I like it a little chunky.  Fold in the rest of the ingredients.

Serve right away as a dip or on top of tacos or whatever you like!
