Update on Mom's Apple Waldorf Salad

This is a lighter, thus healthier version of a salad my Mom makes for most Holidays. Her version is dressed with Mayonnaise and Heavy Cream. She would also use raisins instead of dates and sometimes add Miniature Marshmallows! I truly loved my Midwest upbringing.

Apple Salad before Dressing


I’ve chopped into bite size pieces two large Red Apples, one Green Apple and about six stalks of Celery Root. I sprinkle over the Apples Lime or an other Citrus Juice, this helps keep the fruit from turning brown.  Add about one cup of Walnut pieces which you have toasted in a heavy skillet. Also toast in the same manner 8 or so fresh Basil Leaves. Finally I’ve used about one cup of chopped Dates. Generously season with Salt and Black Pepper.


Items to have on hand for a quick Dressing; Balsamic Vinegar, White Wine, Olive Oil, Salt & Pepper


Whisk together Balsamic Vinegar, White Wine, Olive Oil and Salt & Pepper. This kind of Salad Dressing is really best made to/ by taste. I never measure anything… yes, this sometimes causes problems. For this use equal amounts of Wine and Olive Oil. I used roughly 1/2 cup of each and about 1/8 cup of Balsamic Vinegar, use more or less Balsamic according to your taste. I seasoned this with about 1/8 teaspoon of each Salt and Pepper, about 1/4 teaspoon of Cayenne and Nutmeg. Again this can be more or less, it’s up to you! After this is thoroughly whisked together pour over  the other ingredients, put in a non metal container, cover and chill at least an hour.

Now some tips on making this your own!

Use any type of nut/ nuts you have on hand or prefer. I’ve also used Raisins, or other dried fruit. Soaking the dried fruit in Brandy or other Liquor adds a bit of Zing! Use Basil as I did or any Fresh Herb you want. Sometimes I will use the zest of an Orange or some other Citrus Fruit. Happy Cooking and Enjoy!
