Chicken Breast with Toasted Pistachio & Green Onion in Foil


  • 4 Boneless Skinless Chicken Breasts, remove larger bits of fat, rinse and pat dry. (about 1 1/2 Pounds)
  • 1 Large Bunch of Green Onion, rinsed and cut in 1/4 inch pieces
  • 1/2 Cup Pistachio Nutmeats, slow toasted in a heavy skillet or the tiny, tiny toaster you bought off craigslist
  • 1/2 Stick Butter, melted, and cooled to room temperature
  • 1 to 2 Teaspoons, Smokey Paprika
  • Salt & Pepper to taste
Preheat oven to 450 degrees.
Fold 4 12 inch squares of heavy foil in half, making a nice crease at the fold, then unfold.  Coat each Chicken Breast with the Melted Butter which works best at room temperature.
Place Chicken in center of foil square right at the fold.
Season to taste with Salt & Pepper and enough Smokey Paprika to cover the Chicken Breast. These will not brown, so the Smokey Paprika not only adds amazing flavor, but adds a lovely color as well!
Divide you Green Onion and Toasted Pistachio Nutmeats in 1/4’s, sprinkle a 1/4 on top of each of the seasoned Chicken Breasts.
Fold the foil over the Chicken Breast and fold up all sides and crimp to seal each package really tight.
Place Chicken Breast packets on a Low Sided Cookie Sheet Pan, a 15 x 10 inch pan should work.
Bake at 450 degrees for 20 to 24 Minutes. Let sit in foil packages for about 5 Minutes. Make a slit in foil to release steam before opening.
