Pineapple Fried Rice with Turkey

wtf, It always amuses me how much rice Chinese Take-Away Places give you. I ordered food for one person. I have almost 6 cups of Steamed White Rice left over from yesterdays take-away. I’m going to add Pineapple and some Fresh Veggies and make a delicious Pineapple Fried Rice!

5 to 6 cups left over Steamed White Rice

20 ounces Boneless Turkey Breast, cut into 1/4 inch pieces

1 Large Sweet Red Bell Pepper, course chopped

1 Bunch Green Onion, course chopped

14 ounces Cherub Tomato, cut in half

1 or 2 Cloves Garlic, crushed

1 1/4 cups Whole Cashews, lightly toasted. Stir and watch as you toast Cashews, they burn very, very easily

Fresh Basil, about a bunch the size of my fist, email for pictures of my fist.

20 ounce can Pineapple Chunks in Natural Juice, drained, save juice

1 to 2 Tablespoon Soy Sauce

1 Tablespoon Oyster Sauce

1 Tablespoon Chili Pepper Sauce

1/4 Teaspoon Nutmeg

1/4 Teaspoon Ginger

2 Chicken Bouillon Cubes

2 Eggs

2 or 3 Tablespoons Corn Oil

Pepper to Taste

After prepping Veggies glug a few glugs of Corn Oil into a Wok or Heavy Skillet. Bring Oil to just spattering at medium high/ high temperature. Use a very hot temperature, with out burning Oil.

Add you Turkey Meat, Season well with Pepper and cook stirring constantly until fully cooked. About 2 to 5 minutes should do, cut a large piece in half and check for any pinkness.

Now add the Sweet Red Bell Pepper and Garlic, stir fry for about 2 or 3 more minutes.

Add Rice, Pineapple and Cashews, and Cherub Tomato, stir until hot, 3 to 5 minutes or more. This is a dish where you have to be tasting always!

Now crumble Bouillon Cube over top of Rice mixture, add all Dry Spices/ Seasonings. Mix together well.

Add the Soy, Oyster and Chili Pepper Sauces and a bit of the Pineapple Juice. Mix together well.

Crack the 2 Eggs over all. Stir together until Egg is thoroughly cooked.

Tear Basil Leafs into Rice Mixture. Mix and Serve! Use extra Basil as garnish!

I used too much wet ingredients; Soy, Oyster and Chili Pepper Sauces & Pineapple Juice. The amounts listed above have been adjusted. They should be correct. So my Pineapple Fried Rice is a little moist.
