Apple with Cardamom & Butter

3 Large Apples

2 Tbs Butter

2 Tbs Olive Oil

1 Medium Lemon, Juice & Zest

1/4 Teaspoon Cardamom

1/4 Tsp Cinnamon

Salt, Dash of

1 Tsp Brown Sugar

1/4 Cup Fine Bread Crumbs

 

Cut the Apples in quarters, remove seeds and core. Slice each piece length wise into 3 slices. Put Apple along with the Lemon Zest & Juice into a large Mix Bowl, mix well.

Shake well in a Zip Bag the Bread Crumbs, Salt, Cinnamon, Cardamom and Sugar. Add the Apple/ Lemon Zest and shake to coat all Apple pieces.

Broccoli Gratin With Cumin Seeds & Labneh

4 Cups Broccoli, Cut/ Break in Bite Size Pieces

1 Medium White Onion, Medium Course Chopped

1 Tbs Garlic, Fine Chopped

1 Tsp Cumin Seeds

3 – 4 Tbs Butter

1 Lemon, Zest & Juice

1 Cup Labneh

1 Cup Gorgonzola, Crumbled

1/2 Cup Heavy Whipping Cream

Salt & Pepper to Taste

1/4 Tsp Cinnamon

1/4 Tsp Nutmeg

FOR THE TOPPING

1/4 Cup Fine Bread Crumbs

1/2 Cup Parmesan, Shreds

 

Preheat oven to 375 degrees.

Pretzel Crusted Beer & Mustard Battered Pork Chops

5 Six Ounce Boneless Pork Chops

1 Cup Bitter Ale, (Beer)

1 Cup Flour

Salt & Pepper to Taste

Nutmeg, Dash of

1 Large Egg

3 – 4 Tbs Spicy Brown Mustard

3/4 Cup (more) Bitter Ale, (Beer)

1/2 Tsp Garlic, Fine Chopped

2 Cups Salted Pretzels, Medium Fine Crushed

2 – 3 Glugs Olive Oil

 

Pour 1 Cup of Beer in a medium mix bowl, set aside

 

In Big Zip Bag shake together the Flour, Salt, Pepper & Nutmeg, set aside

Sirloin Steak with Chili Mango Chutney

Start this at least 24 hours before you plan on grilling the steak!

 

THE MARINATE/ Cooks Down Into Chutney

1/2 Cup Onion, Fine Chopped

1/4 Cup Mango, Medium Fine Dice

1/4 Cup Fire Roasted Red Bell Pepper, Fine Chopped

1 -2 Tsp Garlic, Fine Chopped

10 – 15 Caper Berries, Salted, Fine Chopped

2 Tbs George Dickel Rye Whisky (The smoky Vanilla flavor is perfect for this dish)

3 -5 Shakes Chili Pepper Sauce, I use Trader Joe’s

3 -4 Tbs Mango Juice

1/4 – 1/2 Cup Vegetable Broth

Salt & Pepper to Taste

Dash of Nutmeg

Spicy Pork & Broccoli Egg Rolls

3 – 4 Glugs Olive Oil

1 Pound Lean Ground Pork

1/2 Cup Onion, Fine Chopped

1/2 Cup Red Bell Pepper, Fine Chopped

1/2 Cup Green Bell Pepper, Fine Chopped

2 – 3 Tsp Garlic, Fine Chopped

1 Cup Carrot, Shredded

4 Cups Broccoli, Shredded (I use Pre Shredded ‘Broccoli Slaw’)

2 – 3 Thai Birds Eye Dried Peppers, Fine Crushed

Salt & Pepper to Taste

Dash of Nutmeg

1/2 Tsp Turmeric

2 – 3 Tbs Soy Sauce

2 Package Egg Roll Skins, 6 x 6 inch size. (Keep in Fridge until Ready to Use)

Cereal Bowl 1/2 Full

Pickled Carrots with Mandarins & Hard Pear Cider

1 Pound Tri Colored Baby Carrots, Cut in 1/2 Length Wise if Necessary

1 Large Mandarin Orange, Zest & Segments

1/2 Bunch Green Onions,  Course Chopped

Fresh Ground Black Pepper

Mix together the above ingredients. Loose pack into two 2 Cup Glass Jars with Lids.

 

THE BRINE

1 1/2 Cups Hard Pear Cider

1/2 Cup Apple Cider Vinegar

1/2 Cup Water

2 – 3 Tsp Garlic, Fine Chopped

1 1/2 Tbs Course Salt

Dash of Nutmeg

1/2 Tsp Turmeric

1 Tbs Sugar

2 – 3 Thai Birds Eye Peppers, Fine Crushed

3- 4 Bay Leafs

Crunchy Almond French Toast with Saffron Whiskey Cream

FRENCH TOAST

2 -3 Tbs Butter

1 Loaf Ciabatta Bread, Cut into Slices about 2 Fingers Thick

6 Eggs

1 Cup Cream, I used 1/2 & 1/2 Cream

2 Tsp Vanilla

1/2 The Zest and 1 Tsp of the Juice Of One Large Orange

2 Tbs George Dickel Rye Whiskey ( Dickel has a very Smokey Vanilla Flavor perfect for this French Toast).

1/4 Tsp Cinnamon

1/2 Tsp Nutmeg

Pinch of Salt

THE CRUNCH

3 Cups Special K

Haricot Vert & Red Fingerling Potato Salad

THE SALAD

1 Pound Red Fingerling Potato, Cut into Coins

8 Ounces Green Haricot Vert

1/2 Bunch Green Onion, Course Chopped

1/4 Cup Green Olives, Pit & Course Chopped

3 Tbs Fire Roasted Red Bell Pepper, Bits Size Pieces

1 Tbs Capers, Dry in Salt, Medium Fine Chopped

4 Eggs, Hard Boiled, Course Chopped

THE DRESSING

4 – 6 Tbs Mayonaise

1 Tsp Garlic, Fine Chopped

1 – 2 Tsp Lime Juice

Good Shake, Worcestershire Sauce

1 Tbs Olive Oil

1/2 – 3/4 Cup Pinot Grigio

Dash, Nutmeg

Black Pepper to Taste

 

Place a heavy, grooved, grill pan

Mango Chili Stir Fry with Snow Pea Pods & Pork

12 Ounces Boneless Pork Loin, Julienned 1/4 Inch Strips

2 or 3 Glugs Canola Oil

2 – 3 Tbs Garlic, Fine Chopped

1/4 Cup Fire Roasted Red Bell Pepper, Julienned

6 Ounces Stringless Snow Pea Pods

1/4 Cup Mango, Large Dice, Finger Nail Size

1/2 Bunch Green Onion, Fine Chopped

Salt & Pepper to Taste

 

4 or 5 or More Shakes, Chili Pepper Sauce, I love Trader Joe’s

 

2 or 3 Shakes of Soy Sauce

 

In heavy skillet or Wok at Medium High temperature heat oil just till the splatter test
