Untidy Joseph aka Sloppy Joe, Slop, Sloppy Joes

Simple, classic and tasty is all I can say about this dish.  You will be transported back to childhood as these comfort bombs hit your belly!  Truth be told, I make them off the cuff usually this is just one variation I do but only my first post about them.

1 lb ground burger (sub turkey or soy grumbles for healthier versions) 1 white onion diced 2 cloves of garlic diced 1 celery stock diced 1 cup or so of sliced mushrooms (crimini or buttons) 1 can (12 oz.) of tomato sauce (I like Hunts) ¼ cup ketchup 1

Buffalo Hot Wings – Baked

With football just finishing up its 5 week of the 2012 season I thought I better get some fabulous football food fun posted for all your game day munchies.  I am starting with a game day tradition of Buffalo Hot wings that are easy to make at home in the oven.   I bit into the first one and was brought to my knees in wing heaven!

Easley doubled or quadrupled, have enough for a small or a large gathering!  Work in batches for wings all game long.

I will give this a 3 ½ to for on the heat

Risotto with Two Kinds of Mushrooms

Risotto is one of those dishes that seem to intimidate people because it is viewed as labor intensive, in all reality it is quite simple to make and there are endless ways to make it.  Just grab fresh and wonderful produce at the store or farmers market and get cooking!

This risotto is pretty basic and works well as a base for many other ones so feel free to experiment with it and comment with your own creations below.  Oh, this was my first attempt at it so if I can do it you can too!

Slow Cooker Pulled Pork

The last seven weeks I have been working out at the MN Renascence Festival on top of my day job which I usually do some over time so cooking at home has been at a minimum for many of a week.  All I can say is that if the zombie apocalypse happened I would fit right in! One thing I did cook was some awesome slow cooker pulled pork that I took out for my co-workers.
