Grilled Corn Salad

I normally just grill my sweet corn add butter and salt and pepper or use a compound butter with spices and I am done.  I wanted to do something a bit different with this wonderful BBQ side so I went trolling online for inspiration and after getting some ideas I came up with this.

2 ears of corn charred on the grill, kernels cut off of the cob 2 Roma tomatoes, deseeded and copped to your liking ¼ white or red onion sliced into half rings Hand full of fresh basil, leafs torn Several sprigs of fresh thyme

Pulled Pork Sandwiches w/ Yogurt Cole Slaw Topping

I have become a freak for a good pulled pork sandwich recently, I have always liked them but I am finding myself ordering it out more and more these days so I decided to make some at home! Grilled Yukon Gold Potato Salad

Grilling the Potato before making the salad adds an amazing taste and texture. I highly recommend this, use my recipe here, or use your own, but grill your Potatoes! You will love it!


2 pounds Baby Yukon Gold Potatoes, cleaned and halfed

1 medium Pasilla Pepper, course chopped

1 Shallot, course chopped

2 to 3 Tablespoons Olive Oil

Put the above ingredients in a large Zip Bag, shake until everything is well coated with the Olive Oil.

Peach Crisp with Saffron

Start by preheating your oven to 350.

I make a basic Oatmeal Crumble Crust. I use a crust on the bottom as well as the top, yeah, I’m versatile that way…

2 to 3 Cups Quick Oatmeal

1 to 1 1/2 Cup Flour

1/3 Cup Brown Sugar

1 to 1/2 Cup Butter, melted

Put the first 3 ingredients in a real big mix bowl. Mix well. Add melted Butter. Mix until a course, pea size crumb forms. I usually start with the lower of the amount of the dry ingredients I have listed. Add more to achieve desired crumble

Chicken with Chipotle Peach BBQ Sauce

OMG is all I can say about this sweet, smoky and spicy BBQ sauce.  It just might be my favorite one right now!

½ cup ketchup ½ cup peach preserve 2 Tbls. apple cider vinegar 2 Tbls. brown sugar (packed) 2 Tbls. Worcestershire sauce 2 Tbls. molasses 2 chipotles (canned in adobe sauce) 1 tsp. adobe sauce 1 shallot grated (about 2 Tbls.) 1 clove of garlic grated 2 tsp. chipotle powder 1 tsp. cayenne powder ½ tsp. paprika

Mix everything together in a sauce pan, bring heat up until it starts to bubble, stir often then reduce
