Pork Chops with Wine Mustard Sauce:

This is an easy and elegant weeknight meal for two and could easily be doubled for the whole family.  The tanginess of the mustard is great with pork.

2 thick pork chops 1 shallot diced fine 3/4 cup dry white wine (chardonnay) 2 tsp.Dijonmustard 1 Tbls. butter Salt and pepper to taste

Lightly salt and pepper the chops, add a little olive oil to a frying pan and over medium to medium high heat fry the pork chops to get a nice sear on both sides (2 minutes per side) remove from pan.

Add Shallots to pan and sauté

Meatballs with Vodka Sauce

So, I’ll be upfront right from the start, I cheat, I use a good quality Vodka Sauce… So there, quit reading if you got a problem with that!


1 lb 92% Lean Ground Beef ( Pink Slime Optional)

1 lb Ground Turkey

1/2 Cup Celery, Fine Chopped

1/3 Cup Red Bell Pepper, Fine Chopped

1 Medium Yellow Onion, Fine Chopped

1 Tbsp Garlic, Fine Chopped

Salt & Pepper to Taste

1 Tsp Smokey Paprika

1/2 Tsp Nutmeg

Shake of Cinnamon

1/4 Cup Fresh Parley, Fine Chopped

12 oz Jiffy Corn Muffin Mix

3 or 2 Glugs Olive Oil

Chorizo & Crab Saute

8 oz Chorizo Cut Up

8 oz Crab Meat

2 Stalks Celery Chopped

1 Medium Yellow Onion Chopped

1/2 Large Red Bell Pepper Chopped

12 oz Carrots Chopped

1 Tbs Garlic Chopped

8 oz Red and Yellow Grape Tomatoes ( Cut in 1/2 if needed)

Salt & Pepper to Taste

1/4 Tsp Nutmeg

1/4 Tsp Ginger

1/4 Tsp Cinnamon

1 Tsp Smokey Parika

Olive Oil 2 Good Glugs

Shiraz Good Splash or Two

All The Veggies Chopped


Pour two good glugs of Olive Oil in Heavy Saute Pan, turn heat to medium. Add Chorizo, cook, stirring now

Asian Pepper Sauce Marinated Salmon (Sriracha)

This is a really good and easy marinade to make for salmon which will add an Asian twist to your meal.  You can grill or broil this dish for year round yum!

Pair with Pale Ale such as Odell’s Barrel Pale Ale

¼ cup Sriracha (Asian hot pepper sauce) 1 Tbls. Asian fish sauce (sub soy sauce if desired) ½ Tbls. grated fresh ginger 1 Tbls. fresh lime juice 4 servings salmon (half pound or so per serving)

Mix first four ingredients well, spread on top of salmon and let marinate for 1-2 hours in the fridge, take

Pork Chops Marinated in Spicy Yogurt Sauce

My last post was a spicy yogurt marinated salmon/trout which was awesome!   The problem was I had leftover marinade, like a lot since I made only one serving of the trout that night.  I don’t like to waste so I thought I would try it on some pork chops that I had bought for later in the week.  I slathered a bunch on both sides of two chops, I had bone in medium thickness and let them let them marinade for a day and a half, I think you could marinade them for as little as 1 hour but
