Pad Thai w/ Beef, Mushrooms, Veggies, and Sriracha

I love Thai food for its simple commitment to quality and flavor.  An umami burst of yum and the heat, what better to beat a cold winter day!

This is my take on a Pad dish, while not the traditional Pad Thai, it has lot of the elements of other Pad dishes.

Simple Spaghetti Sauce

I am a big fan of spaghetti for its ease and quick prep time. Not only that it is fun to eat, just as my parrot, she loves to eat it and can’t get enough! The only problem is that store bought sauce is kind of flat in the taste department. Easy Black Beans Side Dish

This is something I made for a side dish with my fajitas the other day.  Quick and easy and really yumm-o-licous

1 can of black beans Glug of olive oil ½ cup chopped onion (white) 1 clove garlic chopped Juice of half a lime 2 Tbls. dry white wine or beer, or water Few dashes of cayenne

Fajitas - Lime Marinated

Miss fryingpan had to work all weekend so she wanted to have something she loves for dinner, FAJITAS! Nice and bright in flavor and fun to make and eat, who wouldn’t want these treat on a cold Minnesota winters night?
