Pork chops w/ apples and shallots

So I tried something a little different on the grill the other night with varing results.  It was apples and shallots over grilled pork chops. Here is what I did:

 2 pork chops 1 granny smith apple peeled and cut into wedges 1 shallot ½ cup of hard cider (I used locally made Crispin honey hard cider) salt & pepper to taste ancho chili powder

 Cut shallot into quarters, put into aluminum foil (shape like a bowl) and grill until soften

Add apple slices and cook till softened slightly.  Add hard cider and cook down, mean while grill pork till done,

Curry Boneless Country Styled Pork Ribs

This is a wonderful use of boneless country styled pork ribs.  It is spicy and tangy and the curry puts a nice glow on ones soul.  Serve over rice or with a baked potato and add your favorite veggie or leafy salad for a perfect meal!

Simple ground beef tacos

An all purpose taco with good amounts of flavor which you can make as hot or mild as you like.  It is also easily modified for personal taste or variety.

1lb 85% ground beef (use tvp* for vegetarian meal) ½  white onion diced ¼ green bell pepper diced 1 jalapeño pepper (optional) leave seeds and ribbing in for more heat 1-2 tsps cumin ½ tsp cayenne pepper (optional) ½ tsp oregano ¼ tsp sweet or Hungarian paprika Juice of 1 lime Tortillas, or corn taco shells (use high fiber for healthier option) Salt & pepper to taste

Introduction

In the days of my youth, with no worries to speak of, as I squandered my days playing in the dirt, I remember my mom, dad, and grandma lovingly prepare quality home cooked meals for us.  The smells of their labor filled the house leaving grumbly tummies filled with only anticipation for what was to come.
