Avocado Salad

I will not call this Guacamole, Californians are really anal about their Guacamole. This is  not Guacamole. If I hear any of you refer to this as Guacamole, I will hunt you down and squirt Lime Juice in you eye!

 

6 Extremely Ripe Avacado

4 Ripe Roma Tomato, fine chopped

1 Bunch Green Onion, fine chopped

4 Medium Limes, zested and juiced

4 Medium Lemons, zested and juiced

1 cup total, Red and Green Bell Pepper, fine chopped

4 or 6 Cloves Garlic, fine chopped

I Bunch Cilantro, fine chopped

1/4 Teaspoon Nutmeg

1 to 3 Teaspoons Smokey

Chorizo & Crab Saute

8 oz Chorizo Cut Up

8 oz Crab Meat

2 Stalks Celery Chopped

1 Medium Yellow Onion Chopped

1/2 Large Red Bell Pepper Chopped

12 oz Carrots Chopped

1 Tbs Garlic Chopped

8 oz Red and Yellow Grape Tomatoes ( Cut in 1/2 if needed)

Salt & Pepper to Taste

1/4 Tsp Nutmeg

1/4 Tsp Ginger

1/4 Tsp Cinnamon

1 Tsp Smokey Parika

Olive Oil 2 Good Glugs

Shiraz Good Splash or Two

All The Veggies Chopped

 

Pour two good glugs of Olive Oil in Heavy Saute Pan, turn heat to medium. Add Chorizo, cook, stirring now

Black Beans and Rice

good stuff!

I am a fan of rice but it can be a bit boring at times.  I jazzed up my rice last night with this side dish that could be the main course. 

 

 

1 glug of olive oil ½ white onion 2 cloves of garlic minced 1 15 oz. can diced tomatoes 1 15 oz can of black beans (drained and rinsed) 2 cups cooked* white rice (jasmine rice is a good choice) ½ tsp. cumin ½ tsp. paprika ¼ tsp. cayenne

Pork Chops w/ Adobo Paste Rub

Some like it spicy, here is a Spanish/Mexican spice rub/paste on some pork chops that will really get those taste buds a dancing.

2 Tbls. Oregano 2 Tbls. Paprika (sweet or Hungarian) 1 ½ Tsp. cumin 1 Tsp. Pepper flakes (or as desired) 2 cloves garlic (minced) 1 Tsp. Lemon zest 1 Tsp. Kosher salt (or to taste) ¼ Tsp. freshly ground pepper (or to taste) 2-3 Tbls. Olive oil 3-4 bone in pork chops (thicker the better)
