Salmon & Sweet Corn Quesadilla with Spicy Sour Cream Cole Slaw

8 Ounces Salmon, Boneless

1 Medium Onion, Medium chopped

2 Clove Garlic, Medium chopped

1 Medium Red Bell Pepper, Medium chopped (hold back 12 pieces to use as garnish)

3 or 4 Stalks Green Onion, Medium chopped

1/2 Large Pasilla Pepper, Medium chopped

One 8 Ounce can Sweet Corn, drained

Zest & Juice of 1 Large Lime

4 Ounces Mozzarella, Shredded

Four 8 inch Corn Tortilla

5 or 6 Glugs Olive Oil, divided

12 Ounces Shredded Broccoli Slaw

8 Ounces Sour Cream

Zest & Juice of 2 Large Limes

1/2 Large Pasilla Pepper, Fine chopped

Fish Tacos w/ Spicy Lime Sour Cream Cole Slaw (Taco Pescado)

What we now consider a fish taco dates back to the late 50’s and early 60’s had its origins in Baja Mexico although fish tacos probable dates back a thousand years or so.  This surfers’ favorites basic form is made out of battered and fried or grilled white fish, shredded lettuce or cabbage in a citrus sour cream or mayonnaise and topped with salsa, typically pico de gallo and served on a corn or flour tortilla.

Fajita love’n

Fajitas are a taste and fun meal to make.  I have several ways I like to make them (go figure) here’s one fast and easy way that can be done with a protein of choice.  First off for the best taste, make your own fajita season mix (spice rub as it were)

2 tsps cumin 2 tsps chili powder, if you like it more smoky use ancho chili powder 1tsp paprika, again try different ones of variety (I like sweet or hot) 1 tsp sugar ½ tsp onion powder ½ tsp garlic powder ½ tsp oregano ¼ tsp cayenne,

Simple ground beef tacos

An all purpose taco with good amounts of flavor which you can make as hot or mild as you like.  It is also easily modified for personal taste or variety.

1lb 85% ground beef (use tvp* for vegetarian meal) ½  white onion diced ¼ green bell pepper diced 1 jalapeño pepper (optional) leave seeds and ribbing in for more heat 1-2 tsps cumin ½ tsp cayenne pepper (optional) ½ tsp oregano ¼ tsp sweet or Hungarian paprika Juice of 1 lime Tortillas, or corn taco shells (use high fiber for healthier option) Salt & pepper to taste
