I love ‘Moules et Frites’, however I do not like making Frites. Couscous with Figs, Bacon & Goat Cheese

Goat Cheese stuffed Figs wrapped in Bacon and Sauteed are quite popular as an appetizer. The flavors are wondrous and succulent together. I love Lebanese Style Couccous;

I use it often, it is so versatile, you can serve it hot or cold. What you add to it is as infinite as your imagination. For this recipe I’m going to use the flavors of the appetizer I’ve described above.

1 Cup Lebanese Style Couscous

1/2 Cup Walnuts, chopped

1 Tablespoon Olive Oil

12 Ounces Thick Cut Smokey Bacon, cut into 1/4 inch pieces

Pineapple Fried Rice with Turkey

wtf, It always amuses me how much rice Chinese Take-Away Places give you. I ordered food for one person. I have almost 6 cups of Steamed White Rice left over from yesterdays take-away. I’m going to add Pineapple and some Fresh Veggies and make a delicious Pineapple Fried Rice!

5 to 6 cups left over Steamed White Rice

20 ounces Boneless Turkey Breast, cut into 1/4 inch pieces

1 Large Sweet Red Bell Pepper, course chopped

1 Bunch Green Onion, course chopped

14 ounces Cherub Tomato, cut in half

1 or 2 Cloves Garlic, crushed

1 1/4 cups Whole

Pork Chop with Broccoli & Cauliflower & Caraway

1/2 – 2 Pounds Boneless Pork Chops

1 Pound each Broccoli & Cauliflower, cut into bite size pieces

3 Tablespoons Fresh Marjoram

1 Large Onion, cut in 1/2 and sliced thin

2 or 3 cloves Garlic, fine chopped

Olive Oil

3 or more Tablespoons Caraway Seeds

1/4 Teaspoon Cayenne

1/2 Teaspoon Smoky Paprika

1/2 to 1 Cup White Wine, I used a nice California Pinot Grigio

Salt & Pepper to taste

Saute the Onion and Garlic in 2 or 3 glugs Olive Oil until translucent, Set aside.

Translucent Onion & Garlic


Add another glug of Olive Oil

Pork Chops with Wine Mustard Sauce:

This is an easy and elegant weeknight meal for two and could easily be doubled for the whole family.  The tanginess of the mustard is great with pork.

2 thick pork chops 1 shallot diced fine 3/4 cup dry white wine (chardonnay) 2 tsp.Dijonmustard 1 Tbls. butter Salt and pepper to taste

Lightly salt and pepper the chops, add a little olive oil to a frying pan and over medium to medium high heat fry the pork chops to get a nice sear on both sides (2 minutes per side) remove from pan.

Add Shallots to pan and sauté

Chorizo & Crab Saute

8 oz Chorizo Cut Up

8 oz Crab Meat

2 Stalks Celery Chopped

1 Medium Yellow Onion Chopped

1/2 Large Red Bell Pepper Chopped

12 oz Carrots Chopped

1 Tbs Garlic Chopped

8 oz Red and Yellow Grape Tomatoes ( Cut in 1/2 if needed)

Salt & Pepper to Taste

1/4 Tsp Nutmeg

1/4 Tsp Ginger

1/4 Tsp Cinnamon

1 Tsp Smokey Parika

Olive Oil 2 Good Glugs

Shiraz Good Splash or Two

All The Veggies Chopped


Pour two good glugs of Olive Oil in Heavy Saute Pan, turn heat to medium. Add Chorizo, cook, stirring now

Fajitas - Lime Marinated

Miss fryingpan had to work all weekend so she wanted to have something she loves for dinner, FAJITAS! Nice and bright in flavor and fun to make and eat, who wouldn’t want these treat on a cold Minnesota winters night?

Baked Walleye with Dill Béchamel

Isn’t it great to be lazy on New Year’s Day? I think so, nurse your hang over, watch movies and play video games sounds good to me! As the day grew older I felt we needed to feed our soul with some light and healthy meal and fish was the perfect complement to a nice lazy day, easy and delicious even though there is that blasted fancy French term again, no sweet, it is EASY.

Eggplant Breaded & Baked Served with Vodka Sauce

Preheat Oven to 450


1/2 cup fine crushed Wheat Chex

1/2 cup shredded cheese (I used a combination of Pecorino Romano, Monterey Jack and Sharp Cheddar).

generous amounts of Salt and Pepper

1/4 teaspoon Cayenne

1/4 teaspoon Nutmeg

2 tablespoons each chopped Fresh Sage and Marjoram

Mix all the above together, set aside.


Course Chopped Fresh Sage and Marjoram


Dry Ingredients Mixed Together for Breading


Scrub and clean one medium size Eggplant. Slice into 1/2 to 3/4 inch pieces.

Chicken with Bell Pepper and Mango

I’m not sure what to call this dish, or really, what it is… I started with the idea of ‘Chicken ala King’ and took a look at what I had in the kitchen. This is what I’ve ended up with!

 I started by chopping Red, Yellow and Green Bell Pepper ( I’ve got about 1 1/2 cups), a Pasilla Pepper, a medium White Onion and a Green Italian Squash ( Zucchini).


Chopped and Cut Up Veggies.

 I placed a 1/4 cup of Dry Mango and 2 Chicken Bouillon Cubes into about 1 cup of very hot water.
