Bosc Pear & Sweet Red Belle Pepper Poached with Cardamom & Cinnamon

3 or 4 Large, Bosc Pear, Cleaned and Cut into 1 Inch Pieces

1 Large, Sweet Red Belle Pepper

1/4 Cup, Chive, Fine Chop

1/4 Cup, Clover Honey

1/4 Cup, Sierra Nevada Side Car Orange Pale Ale, (Traditionally the rest of the Beer goes into the Cook.)

1 or 2, Dry Thai Bird Eye Pepper, Fine Crushed

2 or 3, Cinnamon Stick

1/4 Teaspoon, Cardamom

Salt & Pepper to taste

Dash of, Nutmeg

 

Put all ingredients into a medium heavy metal skillet

Poach and Stir on the occasion over a medium temp until the desired texture, crispness, remove

Pastrami & Sweet Red Belle Pepper in a Mustard & Soy Broth

1 Large, Red Onion, Sliced Extra Thin, Use Your Mandoline

1 Large, Sweet Red Belle Pepper, Thin Julienned

8 Ounces, Pastrami, Thin Sliced then Julienne Into Thinnest Strips

1/4 Cup, Sun Dried Tomato, Fine Chop

8 Ounces, Sugar Snap Peas, NSA

2 or 3 Glove, Garlic, Finest Chop

2 Cups, Beef Broth

2 Cups, IPA Style Beer

3 or 4 Tablespoon, Soy Sauce

3 or 4 Tablespoon, Spicy Brown Mustard

1 Teaspoon, Thyme, Fine Chopped

3 or 4 Glugs, Olive Oil

8 Ounces, Dry ‘Hakka’ Style Flat Noodles, Any Brand or Type Broad Noodle Will Work

Salt & Pepper

Pork Picnic Roast/ Skin On, Slow Cooked in Molasses & Pumpkin Ale

4 to 5 Pounds Fresh (Not Cured/ Smoked) Pork Picnic Roast

Salt & Pepper to Taste

DRY RUB;

1 TSP Onion Powder (NOT Salt)

1 TSP Garlic Powder (Not Salt)

1/2 TSP Dry Mustard

1/2 TSP Red Pepper Flakes, Crushed

3 TBS Brown Sugar

1/4 TSP Nutmeg

3/4 TSP Clove, Ground

3/4 TSP Allspice

1/4 TSP Cinnamon

Sift or Mix the above 9 ingredients together really, really well.

 

WET RUB;

3 or 4 TBS Molasses

3 or 4 TBS Dark Soy Sauce

1/3 Cup Seasonal Pumpkin Ale, I used Anderson Valley’s version.

Whisk the above 3 items together.

Squeeze Me IPA

Deschutes inspired beer in a Deschutes pint glass, hey what the hell is the Rogue sample glass doing there?

This beer was inspired by the beauty of Deschutes Fresh Squeeze. It is not a clone but it comes very close to it, we think it is a fusion of Fresh Squeeze and Indeeds Mosaic, the dankness of the Mosaic hop and the punchy Citra hop creates a beautiful beer that is still our favorite beer we brewed.
