Thai Chicken Fried Rice

This is a pretty basic Thai fried rice recipe, there are a lot of other options you could do with this recipe but this is a good starting point!  Use as a main course or a great starter.

2 cups of leftover rice – Jasmine rice is recommended (slightly dry is best) 1 lb of chicken breast or tenders cut into chunks (may use leftover meat too) 1 Tbls. soy sauce (low sodium) 1 tsp. fish sauce (optional) ½ onion sliced or 1 shallot sliced 2 cloves garlic minced 1-2 carrots diced or in match sticks 2-3 scallions sliced

Chicken Fingers/Tenders

Another in my series of football foods/snakes are chicken fingers, yes I am way behind on this series, but the playoffs are upon us, so bugger off!  There is still time for a few more.

Not only are they easy to make but they are easy to customize.  Use different spice blend in the bread crumbs and have several kinds of dipping sauces to keep them coming back for more.  I am thinking of BBQ sauce, buffalo wing sauce, ranch dressing, sweet and sour, marinara, seasoned sour cream, amongst others.  Let your creativity go wild!

Buffalo Hot Wings – Baked

With football just finishing up its 5 week of the 2012 season I thought I better get some fabulous football food fun posted for all your game day munchies.  I am starting with a game day tradition of Buffalo Hot wings that are easy to make at home in the oven.   I bit into the first one and was brought to my knees in wing heaven!

Easley doubled or quadrupled, have enough for a small or a large gathering!  Work in batches for wings all game long.

I will give this a 3 ½ to for on the heat

Chicken Breast with Toasted Pistachio & Green Onion in Foil

 

4 Boneless Skinless Chicken Breasts, remove larger bits of fat, rinse and pat dry. (about 1 1/2 Pounds) 1 Large Bunch of Green Onion, rinsed and cut in 1/4 inch pieces 1/2 Cup Pistachio Nutmeats, slow toasted in a heavy skillet or the tiny, tiny toaster you bought off craigslist 1/2 Stick Butter, melted, and cooled to room temperature 1 to 2 Teaspoons, Smokey Paprika Salt & Pepper to taste Preheat oven to 450 degrees. Fold 4 12 inch squares of heavy foil in half, making a nice crease at the fold, then unfold.  Coat each Chicken Breast

Chicken with Chipotle Peach BBQ Sauce

OMG is all I can say about this sweet, smoky and spicy BBQ sauce.  It just might be my favorite one right now!

½ cup ketchup ½ cup peach preserve 2 Tbls. apple cider vinegar 2 Tbls. brown sugar (packed) 2 Tbls. Worcestershire sauce 2 Tbls. molasses 2 chipotles (canned in adobe sauce) 1 tsp. adobe sauce 1 shallot grated (about 2 Tbls.) 1 clove of garlic grated 2 tsp. chipotle powder 1 tsp. cayenne powder ½ tsp. paprika

Mix everything together in a sauce pan, bring heat up until it starts to bubble, stir often then reduce

Chicken in the Slow Cooker/ Crock Pot

Recently I’ve been experimenting with cooking a whole Chicken in the Slow Cooker. It is really amazing how juicy the Chicken turns out. The way you season it has no boundaries! Here is my latest version;

 

I started by softening 1 stick Butter in a two cup glass measure. Add to the Butter 2 tablespoons chopped fresh Marjoram and Sage, one teaspoon Smokey Paprika, 1/2 teaspoon Nutmeg, 1/2 teaspoon Cayenne, 2 tablespoons Dried Lavender, 2 tablespoons Dried Thyme, the zest of one medium Lemon, generous amounts of Salt and Pepper.  Mix well.

Chicken Wild Rice Soup:

Although wild rice is not directly related to Asian rice it is a close cousin.  It is really healthy containing a lot of potion, B vitamins and diet fiber.  To learn more go here.

This version is a much healthier version since it used a margarine spread substitute that is made with yogurt.  Because of the yogurt spread there is no compromise to the flavor, creaminess or richness of the soup, just a lack of a lot of trans-fats.  Feel free to go back for seconds!

Chicken with Bell Pepper and Mango

I’m not sure what to call this dish, or really, what it is… I started with the idea of ‘Chicken ala King’ and took a look at what I had in the kitchen. This is what I’ve ended up with!

 I started by chopping Red, Yellow and Green Bell Pepper ( I’ve got about 1 1/2 cups), a Pasilla Pepper, a medium White Onion and a Green Italian Squash ( Zucchini).

 

Chopped and Cut Up Veggies.

 I placed a 1/4 cup of Dry Mango and 2 Chicken Bouillon Cubes into about 1 cup of very hot water.

Be a Jerk, Jerk Chicken

A little taste of the islands, nice spicy and overflowing with flavor, this jerk is one to get friendly with!  You will want to keep coming back for more!  Serve with Black Beans and Rice and watermelon to it out.

5 Tbsp. Chicken Salad Sandwich

I always make extra when I am cooking, or prepping. I had 3 extra whole Chicken Breast which I marinated along with the ones I threw on the BBQ. The Marinade contained; Zest and Juice of a large Orange and Grapefruit, and 3 each medium Lemons and Limes. To the juice and zest I’ve added about a 1/2 to 3/4 cup good Olive Oil, about 1/3 cup Fresh Chopped Tarragon, 1/2 teaspoon Cayenne and seasoned to taste with Salt and Pepper.
