Potato with Toasted Cumin Seed & a Poached Egg

6 Large, White Potato, Scrubbed and Cut in Bite Size Piece

3 or 4 Glugs, Olive Oil, Best Quality

3 or 4 Tablespoon, Butter

4 or 5 Tablespoon, Cumin Seed, Whole

1/2 Cup, 1/2 & 1/2 Cream

3 or 5 Tablespoon, Yogurt, unflavored/ plain

1 Large Bunch, Green Top Onion, Course Chop (about 1 Cup)

Salt & Pepper to Taste

Dash, Nutmeg

4 Large, Egg, at Room temp



In large, 4 inch deep kettle or skillet (with a lid, for later), on Medium Temp melt Butter and Olive Oil together

When spatter hot, add the Cumin Seed

Orange Waffles with Whipped Maple Orange Butter


2 Large, Eggs, Beaten

1 Large, Orange DIVIDED Use 1/2 the Zest in the Waffle Batter, Set the rest aside to use in the Maple Orange Whipped Butter. USE all the Juice in the Waffles

MILK, Add MILK to the Orange Juice from above to make 1 Cup total

1 Tablespoon, Sugar

1/2 Cup, Cooking Oil, I used Sunflower Oil

1/2 Teaspoon, Vanilla

Put all the above (except 1/2 the Orange Zest, to be used in the Butter), into a large mix bowl, whip together a bit

Then sift in the following;

2 Cups, Flour

4 Teaspoons, Baking

Pork & Bacon Breakfast Sausage

16 Ounces, Ground Pork, 97% lean

8 Ounces, Hard Wood Smokey Bacon, Fine Dice (Put in Freezer for 20 Minutes for Ease of Dicing

1 1/2 Tablespoons, Sage, Finest Dice

1 Tablespoon, Marjoram, Finest Dice

1 Tablespoon Thyme, Finest Dice

1 Teaspoon, Oregano, Finest Dice

1 Tablespoon, Garlic, Finest Dice

1 Large Thai Bird Eye Pepper, Finest Crush

Salt & Pepper to Taste

Dash of Nutmeg

Put everything into a large mix bowl, incorporate with a gentle mix using your hands

Form into 8 patties

Maybe add a little Oil to your heavy skillet

Fry until fully cooked, about

Quiche with 4 Cheeses & Smokey Ham

Prebake two pie crust in a 425 degree oven for about 10 minutes.

The Egg Custard;

6 Large Eggs, at Room Temperature

8 Ounces Cream Cheese, at Room Temperature

1 Pint 1/2 & 1/2 Cream

1/2 Teaspoon Nutmeg

Use a mixer at low speed to blend together the Eggs and Cream Cheese

Add the Nutmeg and slowly pour in the Cream

Mix at medium speed until thoroughly incorporated

Set aside


The Cheese & Ham;

12 Ounces Smokey Ham, Chopped Medium Course

1 Bunch Green Top Onion, Chopped Medium Course

3 Cups Assorted Cheese, Grated, whatever you have on

Coconut Custard Cake, Chocolate Graham & Almond Crust with Mascarpone & Rum Whipped Cream.

Chocolate & Toasted Almond Crust;

Preheat oven to 375 degrees.

2 Cups Chocolate Graham Crackers, crushed fine in blender or food processor

1 Cup toasted Almond, toast in heavy skillet, cool to room temp & crush fine in blender or food processor

2/3 Cup Sugar

Mix together well in large mixing bowl, then add;

12 Tablespoons melted Butter

Stir together until of ‘pea’ size crumbles

Put mixture into a buttered 9 x 13 Glass Baking Pan.

Pat down even, I use the bottom of a measuring cup.

Bake at 375 degrees for 20 to 24 minutes.

Remove from oven

Raspberry & Chocolate

This uses some pre made items as well as Fresh Red Raspberries.

I like to call this my ‘Rachael Ray’, style of cooking.

Here’s what you need;

(1) 10.5 Ounce Package of Newtons Fruit Thins Raspberry Chocolate Flavor, use a rolling pin to fine crush

1 Stick/ 1/2 Cup Butter, melted

1/4 Teaspoon Cinnamon

(4) 6 Ounce Packages of Fresh Red Raspberries

(1) 1 Ounce Package Jello-O Sugar Free Chocolate Pudding Mix

1 3/4 Cups Cold Milk

Cool Whip 8 Ounce Tub, Thawed

Dark Chocolate Powder
